Khajur barfi is a delicious and healthy idea to feed yourself and family specially kids.

Dates are high in fiber and has some amazing nutritional Profile. They helps in relieving constipation and manages blood pressure.

Best for pregnancy and also has anti inflammatory properties.

This Barfi also uses seeds like pumpkin and khus khus seeds which helps to Fight diseases like pcos, heart and liver problems and diabetes. Pumpkin seeds have zinc too.

The addition of pista and other dry fruits make it delectable. The recipe is quite simple and improves immunity during this pandemic times.

Ingredients
  

  • 4 tbsp ghee
  • 150 grams dates seedless

Roughly Chopped Nuts

  • 2 tsp Pumpking seeds
  • ½ cup Almonds
  • ½ cup Cashew
  • ¼ cup Pista

Dry Roast

  • 2 tbsp poppy seeds
  • 2 tbsp sesame seeds

Instructions
 

  • In a mixer jar, blend and coarsely grind dates.
  • On a pan add 2 tbsp ghee and ghee roast the almonds, cashews and pistachios
  • Keep aside once done. Keep aside few of them for garnishing.
  • In the same pan add 2 tbsp ghee and ghee roast the ground dates and cook till ghee releases. Cook on low to medium heat till color changes
  • Add the ghee roasted nuts into this dates mixture on the same pan. Mix well
  • In the same Mixture , add half of the poppy and sesame seeds and mix well and add pumpkin as well
  • Mix till everything is well combined
  • Once done flatten the mixture on a flat plate and let it cool for some time
  • Meanwhile, on a chopping board, sprinkle few pumpkin seeds, poppy and sesame seeds and pistachios
  • Once the dates nuts mixture slightly cools down, grease your hands and start shaping to make it a roll
  • Now roll this on the chopping board which has sprinkled seeds and nuts.. Such that everything sticks to the roll
  • Once done,tightly wrap this dates roll in an aluminum foil and keep this in refrigerator for 2 hours
  • After 2 hours unwrap the roll and cut. Into pieces. Your Khajur (dates) barfi is ready to be consumed and you can store it as well.
