Ingredients
- 750 grams Mutton
- 750 grams Basmati Rice
- 3 medium Fried onions
- 250 grams Curd/yogurt
- ½ cup Ghee
- 1 cup refined oil
- 1 cup coriander leaves
- 1 cup mint leaves
- 3-4 medium green chili
- 2 medium lemon juice
- 2 tbsp black pepper
- 1 tbsp cardamom powder
- 2 tbsp red chili powder
- 1 tbsp Turmeric
- 2` tbsp Ginger Garlic Paste homemade
- 1` tbsp Garam Masala
- 2 tbsp raw papaya paste
- ¼ tbsp saffron dipped in ½ cup milk
- 2 tbsp Green chili paste
- 2 tbsp salt
Whole Spices
- 1 tbsp Black cumin seeds
- 2 sticks Cinnamon stick
- 4-5 pods Cloves
- 4-5 pods Cardamom
- ½ cup Cream optional
Instructions
Step 1
- to marinate the mutton salt 1tbsn Garam masala powder 1 tspEalichi powder ½ tspBlack pepper powder ½ tspTurmeric powder 1tspRed. Chili powder 2tspGreen chili paste 2tspRaw papaya paste 1tspSaffron 20 strandsMint ½ cupCoriander ⅓ cupGinger garlic pasteMix well with muttonMarinate for 2-3 hrs750 grams Mutton, 250 grams Curd/yogurt, 1 cup coriander leaves, 1 cup mint leaves, 2 tbsp black pepper, 1 tbsp cardamom powder, 2 tbsp red chili powder, 1 tbsp Turmeric, 2` tbsp Ginger Garlic Paste, 1` tbsp Garam Masala, 2 tbsp raw papaya paste, ¼ tbsp saffron, 2 tbsp Green chili paste, 2 tbsp salt
Step 2
- add 2 lemon juiceIn marinated mutton2 medium lemon juice
- Add fried oníons (crush it while putting it in)3 medium Fried onions
- Add curd and cream (optional)Oil ½ cup Mix well with the mutton250 grams Curd/yogurt, 1 cup refined oil, ½ cup Cream, ½ cup Ghee
For Rice
- Heat water 2-3 litersAdd whole spicesSalt 2tspGreen chiliesCoriander leavescardamomblack cumin seedsCinnamon sticksclovesMint leaves2tsp fried onions2tbs oilCover it until boiling starts3 medium Fried onions, 1 cup refined oil, 1 cup coriander leaves, 1 cup mint leaves, 3-4 medium green chili, 2 tbsp salt, 2 sticks Cinnamon stick, 4-5 pods Cloves, 4-5 pods Cardamom, 1 tbsp Black cumin seeds
- Cook 50% rice in high flameDrain 50% of the rice quantity in a strainerOther 50% rice cooks up to 70%And put them out too750 grams Basmati Rice
Step 3 (Biryani Dum Process)
- In a handi put all the muttonSpread it nicelyAdd rice over the mutton which is cooked 50%
- Add coriander and mint fried onions, cardamom powder saffron milk 4-5 tbs3 medium Fried onions, 1 cup mint leaves, 1 tbsp cardamom powder, ¼ tbsp saffron
- Again add rice which is 70% cookedAdd coriander, mint, fried onions, saffron milk, pure ghee, oil, 1tbs lemon juice
- Cover and put in a dum high flame for 10 min As steam starts coming out, out the flame to low Cook for another 20-25 min in low flame Your favorite Biryani is ready
